Blueberry Oatmeal Muffins!
These Blueberry Oatmeal Muffins are super moist and delicious. Their soft, fluffy texture is made using oat flour. Oat flour can be easily made by blending oats in your blender. It’s naturally gluten-free and the texture is extremely similar to traditional flour.
These muffins are vegan, gluten-free, and refined sugar-free. They are slightly sweetened with maple syrup. You can enjoy these muffins as is with blueberries, or try experimenting with other berry mixes. I love a mix of blueberries, blackberries, and sour cherries.
I think these muffins are healthy enough to enjoy as part of a quick breakfast, or bring them to lunch or school for an afternoon snack.

Looks delicious. Wondering if you could use Greek yogurt in this?
livesimplyhealthy says
Hi Dianne, greek yogurt should work well for a substitute to coconut yogurt. Let me know how they turn out!

Great with my morning coffee !

I’m vegan and avoid processed food. Could I replace the yogurt with applesauce maybe?
livesimplyhealthy says
I substitute full-fat coconut milk from a can in place of coconut yogurt now. You can also actually make your own vegan yogurt with full-fall coconut milk and a probiotic capsule. Applesauce should work well also! Let me know how it turns out if you try it 🙂

Delicious! First time making it and they got a little too cooked so I recommend 25 mins instead of the recommended 30-35 mins. I used fruit that I had: a mix of banana, raspberries, and strawberries. So delicious!

Glad they worked out! That fruit combination sounds delicious!

Absolutely perfect recipe!!!
I used Aldi’s full fat coconut yogurt right on its expiration date eeek I couldn’t bare to chuck it in the bin lol
My partner can’t eat dairy and he ate more than half of the first batch 🤣🤣(I made them yesterday) and the whole lot was gone tonight so I made another batch in my new silicone muffin tins.
Thanks so for the recipe, so tasty, so quick to chuck together and the whole family loves them!

can i use coconut sugar instead of maple syrup and do i make any other adjustments? 🙂
livesimplyhealthy says
Yes you definitely can! I would just increase the liquid slightly to compensate.
