Vegan Black Bean Lettuce Wraps

These lettuce wraps are SO delicious. They are currently my go to meal for a quick and healthy dinner. The avocados make these wraps so creamy and the beans add extra flavour and protein. These are so simple and quick to throw together, and are perfect for entertaining – everyone can build their own wraps to their preference.

I added basil in the avocado and tomato mixtures, and I love the added flavour. You could use cilantro if you prefer, but I encourage you to try the basil for something a little different and delicious.

Vegan Black Bean Lettuce Wraps

Ingredients

Black Beans:

  • 1 teaspoon coconut oil
  • 1 clove garlic, minced
  • 1 small onion, minced
  • 1/2 teaspoon chili powder (use 1/4 teaspoon if you prefer less spicy)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 398 ml can of black beans, drained and rinsed
  • 1 tablespoon tomato paste
  • 1/2 tablespoon water

Garnishes:

  • 1 head of red leaf lettuce (you could also use romaine but I prefer using red leaf lettuce for their larger leaf size)
  • 2 avocados
  • 2 small plum tomatoes, diced
  • 1 small onion, minced
  • 1/4 teaspoon salt
  • Fresh basil leaves, roughly chopped

Directions

Black Beans:

  1. Heat coconut oil in a small pot over medium heat. Add onion and garlic and cook until translucent, about 3-5 minutes. Season with chili powder, oregano, salt, and pepper.
  2. Reduce heat to low, add black beans, and stir until fully coated. Add tomato paste and water and continue stirring until beans are warmed through, about 5 minutes.

Assembly and Garnishes:

  1. Mash avocados in a bowl. Add approximately half of the diced tomatoes and half of the minced onion. Season with 1/4 teaspoon salt and roughly chopped fresh basil. Stir until combined.
  2. Combine remaining diced tomatoes and minced onions in a bowl. Season with chopped basil and stir until combined.
  3. Spoon black bean mixture into lettuce leaves. Garnish with avocado and tomato mixtures.

  1. I love lettuce wrap tacos 🙂 I was looking for a recipe to bring to a Final Four NCAA party. I decided to use mini butter lettuce cups with your recipe to turn it into an appetizer. I can’t wait to test it out on my friends.
